Ramos Gin Fizz Long Shaken Cocktail

You will need for one glass:

Pasturised powdered egg white (the equivalent of one egg’s worth)
5 – 6 tablespoons gin
4 – 5 ice cubes
3 drops Angostura bitters
2 tablespoons fresh lemon juice
1.5 – 2 tablespoons thin cream soda water (this is optional)

1 Put the ice cubes into a cocktail shaker.
2 Pour in the lemon juice, cream and gin.
3 Add the egg white to the gin mixture.
4 Put Angostura bitters over the mixture.
S Shake until a frost forms.
6 Pour without straining into a highball glass; if wanted top with soda water, and serve.

Variations:

Golden Fizz – addition of powdered egg yolk (pasturised)
Royal Fizz – this would include the equivalent of a whole egg. Ensure pasturised yolk and white powder are used instead.
Green Fizz- add a dash of creme de menthe (0.5 – 1 tablespoon should be enough)
Diamond Fizz – use sparkling wine rather than carbonated water
