Easy Ratatouille Recipe

Ingredients:

2 courgettes/ Zucchinis
1 large aubergine/ 2 egg plants
1 tin of peeled tomatoes
1 green pepper/ bell pepper
1 red pepper  /bell pepper
1 Onion
2 cloves garlic
3 tablespoons olive oil (more if needed)
½ measure of port ( optional)
Salt and pepper to taste

Slice the aubergine and lay on a plate. Cover with a layer of salt to extract bitter juices. Leave for 15 -20mins and then rinse.  Slice onions, peppers and courgettes and  chop garlic.

Heat oil in a large pan and add garlic and onion. When the onion is almost translucent add sliced aubergine.

Cook aubergine for 5 mins, then add sliced courgettes and peppers. Cook for a further 5 -10 mins.

Add tin of tomatoes and cover with a lid if possible. Gently cook for 15 mins

Add a ½ measure of port and cook for a further 5 mins.

Serve on a bed of rice.

( For a non vegetarian Ratatouille, and diced chicken towards the latter stages on the cooking process.)
